Buy a Google Pixel, such as the Pixel 6a or 7a. I think that fits your description quite well. The 6a, for example, is available for just under €250 and refurbed for under €200.

I can really only recommend the Pixel.
All the manufacturers with their stupid customizations are really garbage in my opinion. I've been using Pixel for years and I've never been disappointed
